His first position after graduation was with Salty's Restaurant on the Halifax Waterfront. From there, Blaine accepted a position with Casino Nova Scotia Hotel (formerly Halifax Sheraton), where he quickly rose to the position of Chef Gardermanger. He is an accomplished creator of hot and cold Hor D' oéuvres that have both outstanding taste and visual appear. He has a particular flair for attractively displaying cold food, using mirrors to showcase his creations.
Blaine has also demonstrated an outstanding ability to prepare hot food for banquet functions, and is equally comfortable and experienced catering to groups of 10 to 500+.
His educational background includes culinary courses at Dartmouth Regional Vocational School (NSCC), Nova Scotia Institute of Technology and Tourism Regional Industrial Training. He has taken several management and supervisory courses through the Casino Nova Scotia Hotel.
Blaine is the recipient of one silver and two gold medals for Hot and Cold Salon presentation categories at the Atlantic Provincial Culinary Exhibition.
Blaine grew up in North Preston and currently lives in Dartmouth with his wife, Kimberley, and their two young children. He is active in the community, providing volunteer catering services to not-for-profit groups, church functions, sports and fund-raising events, and for small family gatherings.
